Directions
- Cut the pork into 2 cm pieces. Rub 【A】 into the pork pieces.
- Mince 50g of the onion and slice the other 50g.
Cut the carrot into small bite-size pieces.
- Heat the vegetable oil in a pot over medium heat and stir-fry the minced onion.
Once the onion becomes brown, add 【B】 and stir-fry until the ingredients become fragrant.
Add the curry powder and blend it well with the ingredients while stirring.
Add 【1】 and 【2】, and continue to stir-fry. Add the tomato puree and lightly stir-fry. Add 【C】. When the mixture comes to a boil, cover the pot with a lid and simmer for 10 minutes.
- Once the carrot pieces are tender, add grated potato and mix well. Simmer to thicken the sauce.
- Serve with the rice. Sprinkle the parsley as desired.
