Curry Mayo Banh Mi

Ingredients (2 servings)

Baguettes 2
Cha Lua (Vietnamese sausage) 100 g
Daikon radish 100 g
Carrots 20 g
Nam pla (fish sauce) 1 tsp
Vinegar 1 tsp
Sugar 1 tsp
Lettuce leaves 2
Coriander As needed
[For the curry mayonnaise]
Mayonnaise 4 tbsp
S&B Curry Powder 2 tsp
Sugar 1 tsp
Lime juice 1 tsp
Nam pla (fish sauce) 1/2 tsp
Grated garlic A little

Directions

  1. Cut the daikon radish and carrots into strips, mix with the nam pla, vinegar, and sugar, and leave to soften.
  2. Combine the ingredients for the [curry mayonnaise].
  3. Cut open a baguette, then place the lettuce, [1], cha lua, and coriander
    between the top and bottom halves. Top with [2] and sprinkle with S&B Curry Powder to taste.
