Wipe off any moisture from the whole turkey or chicken. Rub half of [A] inside cavity and the remaining half on the outside. Stuff the turkey or chicken with half of [B]. Arrange the remaining half around the turkey or chicken and press lightly against the meat to infuse the aroma. Recommended to place it in the refrigerator for about 1 day.
Bring [1] to room temperature and place it on a baking dish with the vegetables. Coat the turkey or chicken thoroughly with olive oil or butter, then roast in the oven.
Baking time: Turkey: 180°C (350°F) for 2 to 2½ hours Whole chicken: 180°C (350°F) for about 2 hours
Baste with the pan juices during roasting for a juicy finish
