Fish & Chips with Curry Sauce

Ingredients (2 servings)

Cod 2 fillets (300 g)
Salt 3 g
[Batter] Cake flour 100 g
Egg yolk 1
Beer 2 tbsp
Salt pinch
Black pepper pinch
Milk 3 tbsp
Water 3 tbsp
Egg white 1
Cake flour As needed
Oil for deep-frying As needed
[For the curry sauce] Onions (finely chopped) 50 g
Cooking oil 1/2 tbsp
Hot water 200 ml
S&B Golden Curry Mix 92 g 2 blocks (36.8 g)
Plain yogurt 50 g

Directions

  1. [Curry sauce]
    Heat the oil in a pan and fry the onions. Once softened, add the hot water. Turn off the heat, add the S&B Golden Curry Mix, and stir until dissolved. Return to a low heat and simmer, stirring constantly until thickened. Turn off the heat, add the yogurt and mix well.
  2. Sprinkle salt on the cod and leave it for 1 hour, then wipe off the moisture with a paper towel.
  3. Put the flour in a bowl and make a hollow in the center. Add the egg yolk, beer, salt, and pepper. Add the mixture of milk and water and mix well.
  4. Beat the egg white until stiff, then add to [3] and mix.
  5. Dust the cod with flour, coat with batter [4], and fry in oil at 160-170°C.
    Serve together with the curry sauce [1].
