Wasabi flavored Prawn & Avocado Banh Mi

Ingredients (2 servings)

【Vinegared Vegetables】Easy-to-prepare amount Daikon (Japanese white radish) (cut into thin strips) 100 g
Carrot (cut into thin strips) 100 g
【A】 Salt 2/3 tsp
Vinegar 4 Tbsp
Sugar 2 Tbsp
Water 2 Tbsp
Bread 4 small baguettes
Prawns 150 g
Avocado (1.5cm dices)

Lemon juice 1 Tbsp
【B】 Mayonnaise 2 Tbsp
S&B Wasabi Paste 1,1/2 tsp
Nuoc mam (fish sauce) 1/2 tsp
Red onion (roughly minced) 50 g
Cilantro (chopped) 20 g
Cucumber (sliced) 1
Curly lettuce (cut into bite-size pieces) As needed

Directions

  1. Prepare the 【Vinegared vegetables】. Cut the daikon and carrot into thin strips, and sprinkle salt. When the vegetables wilt, squeeze out the water and mix well with 【A】.
  2. Remove the veins from the prawns and boil them. Cool in cold water and drain. Remove the shells and tails, and cut the prawns into a length of 1-2 cm.
    Cut the avocado into 1-1.5 cm dices and mix with lemon juice.
    Mince the red onion and chop the cilantro finely.
  3. Combine 【B】 and mix in 【2】.
  4. Cut the cucumber diagonally and tear the curly lettuce.
  5. Cut into the side of the pieces of bread and lightly toast them. Put as much 【Vinegared Vegetables】, curly lettuce, cucumber, and 【3】 as you like into the bread and serve.
    Serve with vinegared vegetables and 【B】 as sauce, as desired.
