Salmon (a block of fillet for raw consumption) (7 mm dices) |

Lemon peel | As needed |
Shallot (minced) | 10 g |
Soy sauce | 1 tsp |
S&B Wasabi Paste | 2 tsp |
Chives (chopped) | 10 g |
White radish sprouts | Desired amount |
Directions
- Chop the salmon into 7 mm dices.
- Mince the shallot and chives.
- Mix the soy sauce, wasabi, lemon juice, lemon peel (grated), and 【2】 well.
- Mix the salmon 【1】 with 【3】. Stuff the salmon into a round cercle (ring mold) set on a plate and lift the cercle carefully to make a perfect circle of tartare.
Top with white radish sprouts as desired.
