Salmon Tartare

Ingredients (4 servingst)

(a block of fillet for raw consumption) (7 mm dices)
400 g
Lemon juice 1 Tbsp
Lemon peel As needed
Shallot (minced) 10 g
Soy sauce 1 tsp
S&B Wasabi Paste 2 tsp
Chives (chopped) 10 g
White radish sprouts Desired amount


  1. Chop the salmon into 7 mm dices.
  2. Mince the shallot and chives.
  3. Mix the soy sauce, wasabi, lemon juice, lemon peel (grated), and 【2】 well.
  4. Mix the salmon 【1】 with 【3】. Stuff the salmon into a round cercle (ring mold) set on a plate and lift the cercle carefully to make a perfect circle of tartare.
    Top with white radish sprouts as desired.
