Ingredients (4 servingst)
(a block of fillet for raw consumption) (7 mm dices)
|Lemon juice||1 Tbsp|
|Lemon peel||As needed|
|Shallot (minced)||10 g|
|Soy sauce||1 tsp|
|S&B Wasabi Paste||2 tsp|
|Chives (chopped)||10 g|
|White radish sprouts||Desired amount|
- Chop the salmon into 7 mm dices.
- Mince the shallot and chives.
- Mix the soy sauce, wasabi, lemon juice, lemon peel (grated), and 【2】 well.
- Mix the salmon 【1】 with 【3】. Stuff the salmon into a round cercle (ring mold) set on a plate and lift the cercle carefully to make a perfect circle of tartare.
Top with white radish sprouts as desired.
