Spicy Citrus Paste Croquettes

Ingredients (Easy-to-prepare amount/24 pieces)

【Spicy Citrus Paste Croquettes】 Potatoes (cut into large chunks) 500 g / 1.1 lbs
Salt Pinch
Black pepper Pinch
Onion (minced) 100 g / 3.5 oz
S&B Spicy Citrus Paste 3 Tbsp
Dairy cream 2 Tbsp
Cheese (melting type) 24
Flour As needed
Beaten egg As needed
Panko (Japanese breadcrumbs) As needed
Deep frying oil As needed
【Cherry tomato relish】 Cherry tomatoes (roughly minced) 150 g / 5 oz
Red onion (minced) 50 g / 1.8 oz
S&B Spicy Citrus Paste 2 Tbsp
【A】 Honey 1 Tbsp
White wine vinegar 2 Tbsp
Mustard seeds 1 tsp
Coriander seeds 1 tsp

Directions

  1. Cut the potatoes into large chunks, rinse them, and boil. When the potatoes are boiled, drain. Season with salt and pepper and mash the potatoes until smooth.
  2. Add the minced onion, S&B Spicy Citrus Paste, and dairy cream to 【1】 and mix. Pack the mixture in a cooking tray and allow it to cool thoroughly.
  3. Divide the mixture 【2】 into the number of pieces you are making. Wrap each portion around each piece of cheese and shape it into a cylinder-shaped cake.
  4. Coat each piece with flour, beaten egg, and panko in that order, then deep-fry them in oil at 170-180°C until nicely golden brown and drain off excess oil.

【Cherry tomato relish】

  1. Chop the cherry tomatoes into small pieces. Mince the red onion.
  2. Add S&B Spicy Citrus Paste and 【A】 to 【1】, and mix well.
