Chicken & Cilantro Salad with Curry Dressing

Ingredients (4 servings)

Cilantro 60 g
Red onion (sliced) 1/4
Red bell pepper (sliced) 1/2
Skinless chicken breast (flattened) 400 g
【A】 Salt 1/2 tsp
Cooking sake 2 Tbsp
【B】 S&B Oriental Curry Powder
2 tsp
Sugar
2 tsp
Salt 1/2 tsp
Vinegar
2 Tbsp
Olive oil
4 Tbsp

Directions

  1. Cut off the cilantro roots and pound the roots with a back of a knife.
    Pick the leaves by hands and cut the stems into 2-cm length.
    Slice the red onion and red bell pepper.
  2. Cut the chicken almost all the way through and then open it to flatten. Season the chicken with 【A】. Put the cilantro roots on top and cover with a plastic wrap.
    Microwave at 600 W for 2 min. Flip over the chicken and cover with the plastic wrap again and microwave for 2 min.
  3. Keep the steamed chicken juice for a dressing. Let the chicken cool and shred by hands.
    【Curry Dressing】
    1. Place 【B】 and the steamed chicken juice in a bowl and stir well.
  4. Combine 【1】, 【2】 and 【Curry Dressing】 into a bowl and toss. Place on a plate and garnish with cilantro leaves.
