Curry Flavored Fried Chicken

Ingredients (2 servings)

Chicken thigh 250 g / 8.8 oz
Vegetable oil (for frying) A little
【A】 Soy sauce 2 tsp
Sake (rice wine) 2 tsp
Salt 1/4 tsp
Grated ginger 1/2 tsp
Grated garlic 1/2 tsp
Water 2 tsp
【B】 Cake flour 1 1/2 Tbsp
Potato starch 1 1/2 Tbsp
S&B Curry Powder 2-3 tsp (to taste)


  1. Remove excess fat from chicken thigh and cut into bite size pieces.
  2. Put 【A】 into a thick plastic bag, add (1), rub it on chicken and leave in a refrigerator for over 30 minutes. (Plastic bag can be used instead of a bowl.) Then drain well.
  3. Combine 【B】 in a bowl, add (2) and rub well.
  4. Put (3) in a deep frying pan and pour enough cooking oil to cover chicken. Heat the pan on a high heat and then reduce to a medium heat when the oil simmers. Turn one of the chickens over to see if it is golden brown. If so, turn the rest of the chickens and fry until all become golden brown. (If the color is still light brown when you turn the chicken, cook longer.)
  5. When cooked, drain oil and serve.
