Christmas Curry

Ingredients (5 servings)

Beef (cut into bite-size pieces) 450 g
Onion (cut into bite-size pieces) 350 g
Carrot (cut into bite-size pieces) 100 g
Potatoes (cut into bite-size pieces) 150 g
Vegetable oil 1 Tbsp
Water 540 ml
S&B Golden Curry Sauce Mix 92g 1 pack
Rice (cooked) 5 × 200 g
【Mashed potato decoration】 Potato 300 g
Dairy cream 2 Tbsp
Salt 1/2 tsp
Butter Desired amount
Carrot As needed
Sesame As needed
Green bell pepper As needed
Cherry tomatoes As needed
Mesclun greens As needed

Directions

  1. Cut all ingredients into bite-size pieces.
  2. Heat the oil in a pot, then add and stir-fry the beef in the pot.
    Once its color changes entirely, add and stir-fry the vegetables over medium heat for approx. 5 minutes.
  3. Add the amount of water, then turn down to low heat once it comes to a boil.
    Simmer in the pot with a lid on but partially open for approx. 15 minutes until the ingredients become tender.
  4. Turn off the heat. Add the S&B Golden Curry Mix, then stir until it is completely melted. Turn on the heat again, simmer while stirring occasionally. (Approx. 5 min)
    【Mashed potatoes】
    1. Cover the potatoes in plastic wrap and heat them in a microwave oven at 600 W for 6 to 7 minutes until they becomes soft.
      Remove the potato skin while hot, and then mash the potatoes. Stir with a spatula or the like until it becomes smooth. Add butter for flavor as desired.
    2. Shape half of the amount of ① into a snowman.
      Make the mashed potato into two balls, and place one ball on top of the other. Then, put a boiled carrot piece on top of the head of the snowman like a hat, and use sesame seeds, a carrot bit, and a green bell pepper bit to make the eyes, nose and the button on the chest, respectively.
    3. Shape the remaining half of ① into Santa Claus.
      Cut off the top and bottom of the cherry tomato, place a ball of mashed potato on top of it, and put a cherry tomato hat on its head. Use sesame seeds and a carrot bit to make the eyes and the button on the chest, respectively.
  5. Stuff the rice into a round circle or ring mold to form it into a round shape, then top with the 【Mashed potato decoration】.
    Pour the curry around the rice and garnish with mesclun greens.
