Fish and Chips with Curry Sauce

Ingredients (4 servings)

Cod
400 g / 14.0 oz
Salt 1/8 Tsp
White pepper Pinch
All purpose flour

French fries, frozen
150 g / 5 oz
Vegetable oil (for deep-frying) As needed

【A】
All purpose flour 30 g / 1.0 oz
Cornstarch
1 tbsp
Salt
1/8 tsp
Baking powder
1/8 tsp
Carbonated water
80 ml
Egg
1/2
【Curry sauce】
Onion, chopped
50 g / 2.0 oz
Butter
15 g
Water
150 ml
Milk
60 ml
S&B Golden Curry Mix 92g
2 pieces
Ketchup
2 tsp
Mayonnaise
2 tbsp

Directions

  1. Sprinkle salt and white pepper on sliced cod and set aside for 15 min.
  2. Mix ingredients of 【A】 for batter ‐first mix all purpose flour, cornstarch, salt and bakingpowder well and add carbonated water and egg to it.
  3. Wipe the moisture off (1) , coat with flour and dip in (2).
    Heat vegetable oil to 180℃ and fry for 10 min. Then fry frozen French fries, too.
  4. To make the curry sauce, melt butter in a pan, then add onion and stir-fry. Add water when onion becomes translucent, and bring to a boil.
    Turn the heat off, break S&B Golden Curry Mix into pieces and add them to the pan.
    Stir until mixes are completely melted. Simmer until thickened, stirring constantly.
  5. Add milk and turn the heat off. Then cool it down. Divide it in half and add ketchup to one and add mayonnaise to another to make 2 flavors of sauce.
  6. Place (3) cod and French fries on a plate with the sauce, and squeeze lemon over them.
