Hot Soba with Tempura

Ingredients (2 servings)

Soba noodle 2 portions
Vegetable oil As needed (for deep frying)
Shrimp 2 (As you like)
Boiled fish paste As needed
Green onion As needed
S&B Assorted Chili Pepper (Nanami Togarashi) As needed
【A】 Egg 1/2
Water 100 ml
All-purpose flour 60 g
【Noodle soup】 Water 800 ml
Soy sauce 3 tbsp
Granulated broth 2 tsp
Sugar 2 tsp

Directions

  1. Boil soba noodles, then drain well. Put ingredients of 【Noodle soup】 in a pan, and bring to a boil.
  2. Peel and devein the shrimps. Wash them well and drain. Make a few slits in the underside of the shrimps and straighten these out. Mix ingredients of 【A】, then coat the shrimps in it.
  3. Heat vegetable oil to 170-180℃, and deep-fry for 2-3 min.
  4. Put soba noodles and soup in a warmed bowl, and top with the tempura (shrimps). Sprinkle S&B Assorted Chili Pepper. Put boiled fish paste and green onion on it, as you like.
