Ingredients (5 servings)
|Onion, minced||1 (200 ｇ / 7.1 oz)|
|Potato||2 (200 ｇ / 7.1 oz)|
|Carrot||1 (150 ｇ / 5 oz)|
|Eggplant||1 (60 ｇ / 2.1 oz)|
|Zucchini||1/2 (75 g / 2.6 oz)|
|Paprika||1 (150 ｇ / 5 oz)|
|Tomato||1 (200 ｇ / 7.1 oz)|
|Vegetable Oil||1 Tbsp|
|S&B Golden Curry Mix 92g||1 pack|
- Cut potatoes, carrot, eggplant, zucchini, paprika and tomatoes into bite-sized pieces.
- Stir-fry onions with oil in a large skillet.
Add other vegetables and stir-fry. Add water and simmer until ingredients are tender.
- Turn the heat off, break S&B Golden Curry Mix into pieces and add them to the skillet. Stir until mixes are completely melted.
- Simmer until thickened, stirring constantly.
Serve with rice or noodles.
