Vegetable Curry

Ingredients (5 servings)

Onion, minced 1 (200 g / 7.1 oz)
Potato 2 (200 g / 7.1 oz)
Carrot 1 (150 g / 5 oz)
Eggplant 1 (60 g / 2.1 oz)
Zucchini 1/2 (75 g / 2.6 oz)
Paprika 1 (150 g / 5 oz)
Tomato 1 (200 g / 7.1 oz)
Vegetable Oil 1 Tbsp
Water 540 ml
S&B Golden Curry Mix 92g 1 pack

Directions

  1. Cut potatoes, carrot, eggplant, zucchini, paprika and tomatoes into bite-sized pieces.
  2. Stir-fry onions with oil in a large skillet.
    Add other vegetables and stir-fry. Add water and simmer until ingredients are tender.
  3. Turn the heat off, break S&B Golden Curry Mix into pieces and add them to the skillet. Stir until mixes are completely melted.
  4. Simmer until thickened, stirring constantly.
    Serve with rice or noodles.
